Spotlight: Pina Colada Macarons

Don't have any beach trips coming up? No worries, these macarons can easily transport you to any paradise island after just one bite!

These are very easy, and only take a few simple ingredients for the Pina Colada filling! 


For Macarons: 

Follow same recipe from previous macaron posts :)

For Filling: 

150g unsalted butter (preferably high % fat content) 

170g confectioner sugar (continue to add until desired consistency and sweetness is reached)

1 Tbsp Pineapple extract (more to taste needed) 

1 Tbsp Rum extract (more to taste if needed)  

**Make sure to not add too much extract as it could separate your buttercream** 

Once buttercream is complete, fill macarons and top with coconut shreds for the final touch!
